One of my vivid holiday memories, which I’m sure many share, is walking around the mall with my mom. I was always drawn to the look of the craft stores. And often, they would have castle-like towers of different sized square and round tins, each depicting a special winter scene. We would often leave with at least five, with plans to fill them with special festive candies or cookies and give them to friends and loved ones.
This is a family tradition, and whenever someone enters bearing a beautiful tin there is an excitement over the surprises that are stored inside. One of my favorite things to find inside, though, is this Holiday Saltine Toffee. With five ingredients, and four easy steps, this recipe is a simple but wonderful Christmas candy that is sure to put a smile on the face of those you share it with.
Ingredients:
- 35 saltines
- 1 cup of butter, cubed
- 1 cup of packed brown sugar
- 2 cups (12 oz) of semisweet chocolate chips
- 2 cup of chopped pecans
Instructions:
- Preheat your oven to 350°F. Line a baking pan with foil, and grease the foil. Arrange the saltines in a single layer on the foil.
- In a large saucepan, melt your butter oven medium heat. Stir in the brown sugar. Them bring the to a boil, cooking and stirring for 3-4 minutes or until the sugar is dissolved. Spread the mixture evenly over the saltine crackers.
- Bake for 8-10 minutes or until bubbly. Immediately sprinkle with chocolate chips. Allow the chips to soften for a few minutes, then spread the melted chocolate over the top. Sprinkle this with pecans and allow to cool slightly.
- Refrigerate uncovered for 1 hour or until set. Break the finished product into pieces and store in an airtight container. Enjoy and share with those you appreciate!
