Rhubarb Custard Pie

Ingredients:

  • 3 eggs
  • 2 tablespoons of milk
  • 1 ½ – 1 ¾ cups of sugar
  • ¼ cup of flour
  • ½ -¾ a teaspoon of nutmeg
  • 4 cups of sliced rhubarb
  • 1 tablespoon of butter
  1. Preheat your oven to 400ºF. 
  2. Prepare your pie crust (you’ll need two for this one!).
  3.  In a large bowl, beat the  eggs slightly; add milk. 
  4. Stir in sugar, flour, and nutmeg; mix well.
  5. Stir in rhubarb.
  6. Pour the combination into a pastry lined pie plate, dot with butter. Cover the top of the pie with the second crust. 
  7. Bake the beauty at 400ºF for 50-60 minutes or until golden brown.
