Cherry Rhubarb Cobbler

Cherry-Rhubarb-Cobbler

Ingredients:

Filling:

  • 1 (21 oz) can of cherry pie filling
  • 3 cups of rhubarb, chopped
  • 1 cup of sugar
  • 4 tablespoons of butter

Crust:

  • ½ cup shortening
  • 1 cup of sugar
  • 1 egg
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • ½ cup of milk
  1. Spread the fruit in a 13×9 inch baking pan. 
  2. Sprinkle the fruit with the cup of sugar and dot it with the butter. 
  3. In a mixing bowl, cream the shortening and sugar together. 
  4. Add the egg and beat the mixture well. 
  5. In a separate bowl, combine the flour and baking powder. 
  6. Add this mixture of flour and baking powder alternately with milk to the creamed mixture. 
  7. Pour the combined product over the fruit and bake at 350ºF for 50-60 minutes. 
  8. Enjoy this delish recipe. We recommend pairing it with either whipped cream, vanilla ice cream, or both!
