Ginger & Maple Macadamia Nut Medallions

It’s getting to be that time of year again. The house is a warm beacon in the winter night, with candles glowing from its windows. The voices of Nat King Cole, Mariah Carey, and Michael Buble bring a familiar spirit of celebration. A small villager in a snowstorm looks out from his place in a snowglobe, and the cat’s tail brushes against the hanging stockings as it walks along. But, of course, these beloved moments wouldn’t be nearly as special without the smell of festive treats in the oven, wafting throughout the home.

These deliciously festive ginger and maple macadamia nut cookies can bring the spirit of Christmas to any home. From the sweet smell of maple and chocolate, to the stunning and glamorous look of the final product, these delicious Christmas cookies are a must for the 2020 holiday season.

Ingredients:

  • 1.5 cups butter, softened
  • 1/2 cup sugar
  • 3/4 cup maple syrup
  • 4 cups all-purpose flour
  • 3 tsp. ground ginger
  • 3 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • 1/2 tsp. ground cloves
  • 1.5 tsp. salt
  • 1.5 tsp baking soda
  • 1.5 cups finely chopped macadamia nuts
  • 24 oz. dark chocolate candy coating, melted
  • 1/3 cup finely chopped crystallized ginger

Instructions:

  1. In a large bowl, cream butter and sugar together until light and fluffy. Gradually beat in syrup. In another bowl, whisk flour, spices, salt, and baking soda; gradually beat into creamed mixture. Stir in nuts.
  2. Divide dough in half. Shape each into a 12 inch long roll, then wrap in plastic wrap and refrigerate for 2 hours (or until firm).
  3. Preheat oven to 350° F. Unwrap and cut dough crosswise into 1/4 inch slices. Place these 1 inch apart on ungreased baking sheets and bake for 8-10 minutes or until set. Cool pans for 2 minutes before removing the cookies and placing on wire racks to cool completely.
  4. Dip each cookie halfway into the melted dark chocolate, allowing the excess to drip off. Place on wax paper-lined baking sheets; sprinkle with crystallized ginger (the prettiest part) before refrigerating until set.
